Junior Mint Ganache

Inspired by the familiar pairing of chocolate and mint, this ganache leans rich rather than sweet, with a cool mint finish that feels right at home beside a bowl of popcorn and a favorite film. Served with strawberries, graham crackers, or simply a spoon, it's the kind of dessert that turns an ordinary evening into an occasion
Ingredients
8 ounces bittersweet chocolate, finely chopped
1 cup heavy cream
1 teaspoon peppermint extract
1 tablespoon unsalted butter
Fresh strawberries, for serving
Graham crackers, for serving
Flaky sea salt, optional
Method
Place the chopped chocolate in a heatproof bowl.
Warm the cream in a small saucepan over medium heat until steaming but not boiling. Pour the hot cream over the chocolate and let stand for 2 minutes.
Whisk gently from the center outward until smooth and glossy. Stir in the peppermint extract and butter until fully incorporated.
Allow the ganache to cool for 10 to 15 minutes, stirring occasionally, until slightly thickened but still pourable.
Transfer to a serving bowl or platter. Serve warm, or let stand longer for a thicker, spoonable consistency.
